FREE FOOD AND PANCAKES
I just love going into Coles. All the things you shouldn't eat are gone, and all the thing we should be eating are OK (if a little more pricey).

In the mix above is sow thistle, broad leaf dock, greater plantain borage, and a milk weed I know as Hen's Purse (don't know why it is called that). These wonderful greens are not only freshly picked, high in nutrients, they also have a medicinal component. I am getting everything I need.
Later this afternoon I contemplated making some drop scones, I think having these greens I will make WILLD GREENS LATKIS. I used to make it for my children when they were small. It was a favourite.
Ingredients.
about 200g of finely chopped (or shaved) greens (and any other vegetable you have, left overs and mashed potato work well).
Parsley and chives finely chopped.
1 onion diced really small
butter or oil
2 eggs
salt and pepper
Enough flour (or potato) to make a firm batter
Method
Fry the onion in the butter until well cooked.
Remove to a bowl and beat in the eggs, add the flour (or mashed potato) salt and pepper
Then add the finely shaved greens (or leftovers).
Place batter in tablespoons into a greased pan, and fry until browned
Serve right away with tomato slices or sauce, pesto, soy - whatever your taste.
My children used to eat them as fast as I made them.
