FREE OMLETTE

Last night I made the most wonderful omelette.  A student gave me fantastic big fresh eggs, and I  cut up some newly foraged herbs as well as chives, mint and parsley from the garden and filled the omelette with this herby "salad".

It was luscious, and although my mouth wanted a second one it was so tasty with all those fresh greens, but really I was satisfied without being stuffed.  It will be hard not to make another tonite - but I try not to overdo the eggs.  Maybe a warm herb salad would be good.  I will let you know.

About "mouths"  when the children were small and said the wingey "I'm Hungry".  You know the one.  The sound that makes you want to bang them over the head with a book!  I used to say to them.  "Go to the fridge and look in.  Choose something and decide if your mouth wants it, or if you are hungry.  If your mouth wants it, just have a little, just to satisfy your mouth.  If you are hungry, get a plate and a knife and fork and sit down and enjoy it."  They still use this to make a choice, and they teach it to their children.  It stops a lot of conflict over food.  There are other  things to be conflicted about.
