CHEESE + HERBS
Years ago I made yoghurt cheese and sold it to the local supermarket. They did sell it, and it was gratifying, but I was ahead of my time - it did not race off the shelves.
The cheese I made way back was made by hanging (past used by date) yoghurt in a muslin jelly bag until it was firm. About the texture of ricotta. I then cut into smaller pieces, and drowned it in seasoned olive oil. Easy. In the old days I used mainly spices I had purchased. Now I use herbs I have dried myself - basil, sage, garlic together with chive heads which look rather spectacular and fresh rosemary, and just a little chilli. I do add cinnamon and a grate of nutmeg. Remember - everything is better with chilli (even desserts!).
With the run on everything in the stores due to panic buying, and the lines of empty shelves, I purchased the last $2 of ricotta and that is what you can see in the photo above. By putting it in olive oil it will last much longer, and taste spectacular. While I am having this on my crackers, I can be contemplating making some from scratch.
You can also make lettuce parcels. Wrap the cheese in lettuce and add an onion jam. You can also add avocado (and salmon or good sardines if you are a fish person).
Try it. You will love it.
