HARE TO DAY...
I might have told you that I have an exchange happening in the studio. Well, my vehicle of exchange is DARNING, I swap darning for food. Most significantly in the winter for hare. This is my evening mean. A beautiful stew of hare on a bed of carrots, corn, onions and foraged greens. You should be so lucky.
You can see the parsley, and you can see the shiny rich hare broth. Nothing tastes as beautiful as this. It is dark and rich and contains masses of collagen I am sure. Much more tasty than beef broth, although I haven't tasted wagu broth.
There is no special recipe. I make a hare stew - takes quite a long time. Hours in the slow cooker.. To serve I steam vegetables and foraged greens, and serve the broth and meat pieces poured over the vegetables. Stupendous.
