NEVER SAY PARSLEY

That's what my son said to me... "never ever feed me parsley again".  That's because when he was a child I found a way to get it into every meal.  He was not an entirely well boy, and I knew that only parsley had the wonderful iron stores that would assist in getting him well... so we all ate lots of it.

He may not like it now he is grown up, but I still do and add it to whatever foods I can.

My students (knowing my penchant for this remarkable herb) bring bunches, and when i have too much to fit in the fridge (one can never have too much parsley), I freeze it.  Some I process to a mush, and some I just cut up finely.  I put them in cake pop trays, and freeze, then I put in freezer trays.  It is so convenient just to pop into scrambled egg, or soup or whatever.

You can do this with any herb.
